Welcome to Day 9 of
The 12 Days of Holiday Treats!
Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!
The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019 – 2024 at the bottom of this post too for more inspiration!
Chocolate and raspberry is one of my favourite flavour combinations and in today’s treat, it comes together beautifully.
How many thumbprint cookie recipes do I have on this blog? A lot!
I love a thumbprint cookie (see: Jam Drops, Lemon Shortbread Thumbprints, Lemon Meringue Thumbprints, Pistachio Raspberry Thumbprints, Funfetti Thumbprints, Chocolate Mint Thumbprints and Chocolate Hazelnut Thumbprints). Today’s is a new iteratin that I am so pleased with – and it even *looks* festive (I think!).

As well as being tasty, thumbprint cookies are easy to make – perfect for gifting or adding to your cookie swap. They look lovely on a holiday dessert table as well. So versatile!
Chocolate Raspberry Thumbprint Cookies
Chocolate and raspberry in a thumbprint cookie!
Ingredients
- 57g (1/2 stick/ 4 tablespoons) salted butter, room temperature
- 50g (1/4 cup) granulated sugar
- 1/2 teaspoon pure vanilla extract
- 1 large egg yolk
- 112g (3/4 cup) all-purpose flour
- 1 1/2 tablespoons cocoa powder
- 1 tablespoon milk
- Raspberry jam
Instructions
- Preheat the oven to 350˚F. Line a baking tray with parchment paper.
- Beat the butter using electric hand beaters on high speed until it's light and fluffy, approximately 2-3 minutes.
- Add the sugar and continue to beat on high speed until the mixture is creamy and pale.
- Add the vanilla and egg yolk and mix on low speed until just combined.
- Add the flour and cocoa powder, and continue to mix on low speed until the flour is just incorporated.
- Add the milk and mix until the dough starts to form some wet clumps.
- Divide the dough into 12 equal portions and roll each portion into a round ball. If the dough feels a little dry or like it's not rolling smoothly, hold the dough in your hand for a few seconds until it starts to warm up, then roll it immediately.
- Place each ball on the baking tray and use your thumb to make a small indentation in the top of each cookie.
- Place a 1/2 teaspoon of jam (no more!) into the centre of each cookie.
- Bake for 15-17 minutes until the cookies are lightly golden.
- Remove from the oven and place on wire cooling racks until the jam is cool (around 30 minutes - don't try to eat these right out of the oven as they will be very hot!).
