
This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Pistachio-Matcha Financiers were not actually on the cards for me this week because there has been a massive pistachio recall in Canada.
Ok, well, back to the drawing board for me… thankfully I had pumpkin seeds (pepitas) on hand and I’ve made financiers with them before.I was taken a bit aback reading the headnote to this recipe where Dorie calls financiers a type of cookie. These are FIRMLY in the cake category for me and I am a huge fan (as you can see from all the financier recipes I have on this site!). I *just* published a Chocolate Orange version for part of my 12 Days of Holiday Treats!
These came together quickly and I opted to decorate them with a bit of the white chocolate (the matcha powder didn’t add much of a greet hue and in fact was a bit lumpy as I mixed it into the chocolate so I stopped after probably 1/8 of a teaspoon).
I made 1/2 the recipe which made 12 financiers and enough for 2 leftover that I didn’t bake off – the full recipe makes 28 so either way you make them, there’s leftover batter which I find a pain to deal with (wait until pans have cooled, wash them, grease them and put them in the oven again).

As you can see, either my matcha is past its due date OR it’s not as strong as Dorie’s because I didn’t get the lovely green hue inside my cakes either…
I also didn’t have any freeze-dried raspberry on hand to make these look pretty like Dorie’s but I thought sme festive sprinkles were fun!

I love your festive sprinkles! Sounds like you had a lot of hurdles to overcome to get these done, but they look great. I’m on the fence about baking these. I don’t care for matcha, though my husband likes it, plus the whole too much batter for the pan situation. I will see how I feel in two weeks!
I prefer your use of sprinkles rather than the freeze-dried berries. I would do that the next time I make these. I also made half a recipe and ended up with 14 and no leftover batter.
Yes, I had enough for 14 financiers, but my pan only holds 12, so I didn’t bake off those last 2.
