Welcome to Day 6 of

The Twelve Days of Holiday Treats!

Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!

The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019, 2020, 2021 and 2022 at the bottom of this post too for more inspiration!

Today’s treat is a bit of a blast from the past (i.e. my childhood). It *looks* like a biscotti and it has a second bake like a biscotti but it’s something I grew up knowing as “Almond Bread”. It’s something I was reminded of when I was planning these 12 days of treats as I searched my brain for easy treats to make and these certainly fit the bill. I love biscotti but I seemed to remember a version that was even easier from when I was little. And voilà, I was right – there’s a recipe for it (using walnuts and glacé cherries, ginger, and pineapple) in one of my favourite cookbooks from when I was growing up – The Women’s Weekly Big Book of Beautiful Biscuits.

Ok so these are a *kind* of biscotti but only have a few ingredients – egg white, a small quantity of flour (which you could easily make gluten-free), sugar, and nuts/ fruit. I added a splash of vanilla extract to mine but I’d argue they don’t need it. They are sliced much thinner than biscotti for a more “cracker” effect – indeed, they would be good with a sharp cheddar cheese… I used pistachios and chopped glacé cherries for a festive effect but almonds or walnuts would be great here too!

And they couldn’t be simpler – baked in a loaf tin (here, I’ve used a mini loaf pan to make 24 crackers) so no fussing with making a log shape and trying to make sure it’s a consistent size so when it’s sliced the pieces are similar size.

Pistachio Fruit Bread Crackers

Easy "fruit bread" crackers!

Prep Time 20 minutes
Cook Time 50 minutes
Rest Time 12 hours
Total Time 13 hours 10 minutes

Ingredients

  • 1 large egg white
  • 3 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/3 cup (50g) all-purpose flour
  • 1/4 cup (40g) whole, shelled pistachios (not salted)
  • 1/4 cup (50g) chopped glacé cherries

Instructions

    1. Preheat oven to 350˚F and line the loaf tin with parchment paper, leaving an overhang on each side that can act as “handles” when the loaf is baked.
    2. Beat egg white with an electric hand beater on high speed until soft peaks form.
    3. Add the sugar gradually (1 tablespoon at a time) and continue to beat until it has completely dissolved and the mixture is smooth and glossy with stiff peaks.
    4. Fold in the vanilla with a rubber spatula, then fold in the sifted flour, pistachios and fruit. Mix until well combined.
    5. Pour the mixture into the mini loaf tin and use an offset spatula or back of a spoon to smooth the top as best you can.
    6. Bake for 30 minutes. The loaf will be slightly browned on top and feel firm.
    7. When cool, remove from loaf tin and wrap in aluminum foil. Leave at room temperature overnight.
    8. When you are ready to finish baking, preheat the oven to 300˚F and line a large baking tray with parchment paper.
    9. Use a sharp, serrated knife to cut very thin slices and place them on the lined baking tray.
    10. Bake at 300˚F until crisp, about 20 minutes.

Notes

Store in an airtight container at room temperature.
