The Twelve Days of Holiday Treats!
Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!
The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019 – 2023 at the bottom of this post too for more inspiration!
Today’s recipe is a version of a childhood favourite that mum used to make from The Australian Women’s Weekly The Big Book of Beautiful Biscuits which I think we have made most of the recipes from over the years.
They are “chocolate wheaties” – made with wholemeal flour and wheat germ so they *taste* healthy but they are dipped in chocolate so they also taste like a treat!

The original recipe calls for scooping the dough into teaspoon-size balls and then flattening them slightly with the back of a fork but I was always a bit bothered by the fact that mine never looked quite as neat and tidy as theirs (they always cracked at the sides). Apparently I was the only one this happened to because I did a quick search and found this post where they look perfect just like in the book. GRRR!
Anyway, I wondered about this recipe a few months ago and started playing with it and decided that they work just as well as a rolled-out cookie (they are slightly thinner than if you do the flattened balls of dough but I actually like them better). Instead of dipping them in chocolate (which I sometimes find finicky) I topped them with chocolate et voilà – wheaties reinvented!
Chocolate Wheatie Cookies
An Australian childhood classic, inspired by The Australian Women’s Weekly Big Book of Beautiful Biscuits
Ingredients
For the cookies:
- 57g (1/2 stick/ 4 tablespoons) salted butter
- 50g (1/4 cup) brown sugar
- 1 large egg yolk
- 1 teaspoon pure vanilla extract
- 2 tablespoons shredded coconut
- 2 tablespoons wheat germ
- 1 tablespoon ground flax seeds (flax meal)
- 75g (1/2 cup) wholemeal flour
- 30g (1/4 cup) oat flour
For the topping
- 100g (1/2 cup) chocolate chips (a mix of semi-sweet and milk)
Instructions
Make the cookies:
- Beat the butter and sugar in a small bowl using electric hand beaters until smooth and creamy (approx. 2-3 minutes).
- Beat in the egg and vanilla. The mixture may look like it’s curdled but it will be ok!
- Add the coconut, wheat germ, flax seeds, flour and oat flour and, with the mixer on low speed, beat until the dry ingredients are just combined. The dough should stick together if you press it between your fingers.
- Tip the dough out onto a floured work surface or sheet of parchment paper and roll it carefully until it’s about 5-6 mm (1/4-inch) thick. Place the dough (on a sheet of parchment) on a baking tray.
- Place the tray in the fridge for 30 minutes.
- Preheat the oven to 350˚F and line a baking tray with parchment paper.
- Use a 6cm (2 1/2-inch) round cookie cutter to cut approx. 12 rounds of dough. Place them spaced out on the lined baking tray.
- Bake the cookies for 12 minutes until they are a little bit more golden around the edges and just set (they might feel soft to the touch still).
- Allow to cool completely on the baking tray set on a wire cooling rack.
- When the cookies are completely cool, melt the chocolate (either in a glass or metal bowl over a pan of boiling water or in the microwave on a low power – 50% - setting in bursts of 30 seconds at a time until most of the chocolate is melted. Stir the rest in until it’s completely melted.
- Use an offset spatula or the back of a small spoon to spread about 1 teaspoon of chocolate on top of each cookie, spreading nearly to the edge of the cookie.
- Allow the chocolate to set completely before storing at room temperature in an airtight container (layered between parchment or greaseproof paper if you need to make more than one layer).
Melt the chocolate and top the cookies:
