Welcome to Day 8 of
The Twelve Days of Holiday Treats!
Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!
The recipes I’m sharing are small-er batch (as many of us will still be attending/ hosting smaller gatherings) – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019, 2020 and 2021 at the bottom of this post too for more inspiration!
Today is a holiday take on an Australian childhood favourite – Honey Joys. These are the stuff of childhood birthday parties – Cornflakes, honey, butter and sugar baked in a slow oven – deliciously buttery and sweet but not-too-sweet they’re the sort of more-ish treat you tell yourself “just one more” 😉
I’ve changed things up a little by using Special K (! I KNOW – take away my Australian passport immediately!) and, of course, as a nod to the season, I added festive sprinkles. These come together so quickly and use items you most likely have on hand they are literally the best last-minute treat for the holidays!
Holiday Joys
A holiday take on an Australian classic!
Ingredients
- 3 tablespoons unsalted butter
- 3 tablespoons sugar
- 1/2 tablespoon runny honey
- 2 cups Special K or Cornflake-type cereal
- Sprinkles!
Instructions
- Preheat the oven to 300˚F (150˚C).
- Line a 12-cavity muffin pan with paper liners.
- Pour the cereal into a large mixing bowl.
- Melt the butter, sugar and honey in a small pot over medium-high heat until the butter is completely melted and the mixture is frothy.
- Pour the melted butter over the cereal and use a rubber spatula to mix until all the cereal is fully coated.
- Use a 3-tablespoon cookie scoop to portion out the mixture in the paper liners. Sprinkle with sprinkles.
- Bake at 300˚F (200˚C) for 10 minutes. Cool completely in the muffin pan before eating.
