The Twelve Days of Holiday Treats!
Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!
The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019 – 2023 at the bottom of this post too for more inspiration!
I do love an easy holiday treat that doubles as an easy everyday treat and macaroons fit the bill perfectly here. Easy enough to make as a weekday treat but also easy to dress up for the holidays! Some macaroons are made using condensed milk but these are not – super simple and sweet enough. Just a handful of ingredients will make your house smell amazing and you won’t be able to stop at just one!
Of course, I’ve used Sweetapolita sprinkles here – part of their holiday collection – to fancy them up! (note this is an affiliate link but you can also use EATLIVTRAVWRITE to get 15% off your order!). But these are just as good plain so no worries if you don’t want to fuss with decorating!
They honestly could not be simpler – but do make sure you are using a 1-tablespoon cookie scoop to portion them – not only will they be perfectly round but also even sized to ensure even baking! (that’s also an affiliate link but anyone who knows me will tell you I’m lost without my cookie scoops!)
Festive Macaroons
Macaroons - easy enough to make for everyday but easy to dress up for the holidays!
Ingredients
For macaroons:
- 1 large egg white
- 1 teaspoon pure vanilla extract
- 80g (1 cup) unsweetened coconut
- 50g (1/4 cup) granulated sugar
For garnish:
- Approx. 60g (1/3 cup) chocolate chips
- Holiday sprinkles/ nonpareils
Instructions
- Preheat the oven to 325˚F.
- Line a baking tray with parchment paper.
- Beat the egg white in a small bowl using electric beaters until frothy (2-3 minutes).
- Add vanilla and stir to combine.
- Add the coconut and sugar and stir well to combine, pressing the coconut into the wet ingredients to fully coat.
- Use a 1-tablespoon cookie scoop to portion the mixture into mounds on the parchment-lined baking tray. You might need to use damp fingers to push the mixture into a tighter ball so it sticks together.
- Bake at 325˚F for 16-18 minutes until the macaroons are lightly golden brown.
- Remove from the oven and allow to cool completely, placing the tray on a wire cooling rack.
- When the macaroons are completely cool, melt the chocolate (either in a glass or metal bowl over a pan of boiling water or in the microwave on a low power – 50% - setting in bursts of 30 seconds at a time until most of the chocolate is melted. Stir the rest in until it’s completely melted.
- Use a spoon to drizzle the chocolate over the macaroons.
- Top with sprinkles
Notes
Store in an airtight container for up to a week in the fridge – bringing to room temperature for a few minutes before serving.
