12 Days of Holiday Treats 2024: Chocolate Caramel Cups

The Twelve Days of Holiday Treats!

Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!

The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019 – 2023 at the bottom of this post too for more inspiration!

Today’s treat is an iteration of a recipe I’ve posted a few times – Sunbutter and Jam Chocolate Cups, Chocolate Peppermint Creme Cups and Chocolate Orange Creme Cups. These are fun to make for gifts or your holiday dessert table! This time around, I’m using store-bought caramel sauce (I like the Bonne Maman one) and so they really couldn’t be easier!

It’s a little bit a cross between a craft project and a no-bake treat so it’s actually the perfect holiday project for kids (and adults who might have a bit more time on their hands) – see below to read about who helped me test the recipe!

First you carefully paint the chocolate shells…

After a spell in the freezer, you fill them with the caramel then pop them back in the freezer for a bit…

Then you close them with more chocolate and refrigerate until set.

Voilà!

Chocolate Caramel Cups

Chocolate Caramel Cups

Easy chocolate cups filled with caramel!

Prep Time 30 minutes
Chill Time 30 minutes
Total Time 1 hour

Ingredients

for the chocolate cups:

  • 1/2 cup (100g) milk chocolate chips
  • 1/2 cup (100g) dark chocolate chips

for the filling:

  • approx. 1/4 – 1/3 cup caramel sauce or spread

Instructions

    Make the chocolate shells:

  1. Line a mini-muffin tin with paper liners.
  2. Melt chocolate in a metal or ceramic bowl set over a pot of simmering water (or in a microwave at 50-60% power in bursts of 30 seconds until it's just about melted and then stir to melt the remainder).
  3. Coat the bottom of the paper liners with the chocolate (easiest to use a piping bag here) and use a spoon or small brush to push it slightly up the edges to form a shallow chocolate cup.
  4. Place the tray in the fridge for 15 minutes.

Assemble:

  1. Remove the chocolate cups from the fridge.
  2. If the remaining chocolate has set too hard, re-melt in the microwave at 50-60% power in bursts of 30 seconds until it’s smooth and liquid.
  3. Place the caramel sauce in a piping bag (fitted with a small, plain piping tip - or not. Optional, but it does help to pipe the mixture evenly on the chocolate).
  4. Pipe about 1 teaspoon of the caramel mixture into the chocolate cups. Try to spread it evenly across the surface of the chocolate.
  5. Once you have filled all the chocolate cups, place the tray in the freezer for about 15 minutes.
  6. After 15 minutes, place the remaining chocolate in a piping bag or use a small spoon to coat the top of the caramel. Make sure the chocolate runs down the sides of the caramel to “close” the chocolate casing.
  7. Place the tray in the fridge to set completely. Remove from fridge and allow to come to room temperature before serving.

Notes

Store in an airtight container - you can refrigerate if you like, but will need to bring
them to room temperature before serving.

This week in Petits Chefs baking club, we made this recipe and the kids had the best time!

Ours at school definitely didn’t benefit from the time and freezer I had available to me at home but we managed…

Ok, sure so we overfilled these (some by quite a bit) but they worked out…

I’d say we learned some techniques, even if these were not picture perfect. I told the students “practice makes perfect” so hopefully some of them will try these over the winter holidays!

  1. Gosh, I wonder if any of those made it home!

    These were so incredibly delicious, I had to be sure to only pack “one” in my lunch or be near me when I wanted a snack…otherwise I’d have gobbled the whole container-full. (Or several, at least…)
