The Twelve Days of Holiday Treats!
Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!
The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019, 2020, 2021 and 2022 at the bottom of this post too for more inspiration!
Today’s recipe is a fun twist on a classic Thumbprint Cookie (my very FIRST “12 Days” recipe back in 2019!). I happened to spy some Ruby chocolate (never heard of Ruby chocolate? Read all about it here!) at a local chocolate shop and couldn’t resist – it’s SO pretty (and tasty – not too sweet!). And I mean, pink chocolate just screams out for sprinkles, don’t you think?

These are a super simple recipe that, apart from the ruby chocolate, uses pantry and fridge staples. Use the best butter you can get your hands on/ afford because it does make a difference.

Thumbprint cookies with a rainbow twist!
Ingredients
For the cookies:
- 57g (1/2 stick/ 4 tablespoons) salted butter, room temperature
- 50g (1/4 cup) granulated sugar
- 1/2 teaspoon pure vanilla extract
- 1 large egg yolk
- 112g (3/4 cup) all purpose flour
- 1 tablespoon milk
- 2 tablespoons rainbow sprinkles (jimmies)
For the centres:
- 60g ruby chocolate
- Extra sprinkles to decorate
Instructions
Make the cookies
- Preheat the oven to
350˚F. Line a baking tray with parchment paper. - Beat the butter using electric hand beaters on high speed until it's light and fluffy, approximately 2-3 minutes.
- Add the sugar and continue to beat on high speed until the mixture is creamy and pale.
- Add the vanilla and egg yolk and mix on low speed until just combined.
- Add the flour and continue to mix on low speed until the flour is just mixed in.
- Add the milk and mix until the dough is smooth.
- Add the sprinkles and mix until they are evenly distributed through the dough.
- Divide the dough into 12 equal portions and roll each portion into a round ball.
- Place each ball on the baking tray and use your thumb to make a small indentation in the top of each cookie.
- Bake for 15-17 minutes until the cookies are lightly golden. About 12 minutes into baking, take the tray out of the oven and re-imprint the indentations (use a cork or a champagne cork for this).
- When the cookies are baked, remove from the oven and place on wire cooling racks until completely cool.
- Melt chocolate in a metal or ceramic bowl set over a
pot of simmering water (or in a microwave at 50-60% power in bursts of 30 seconds until it's just about melted and then stir to melt the remainder). - Use a teaspoon or place the melted chocolate in a small Ziploc bag and cut off one corner and evenly distribute the chocolate across all the cookie indentations.
- Sprinkle with extra sprinkles if desired.
