The Twelve Days of Holiday Treats!
Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!
The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019 – 2023 at the bottom of this post too for more inspiration!
Did I save the best til last? Maybe? I always have a hard time deciding which treat I enjoy the most but this one is definitely in this year’s top 3! I’ve called this a slice but some might call it a TIFFIN. Nope – not to be confused with the Indian light breakfast or afternoon meal, this is a no-bake dessert, popular in Scotland, similar to Rocky Road.
Tiffin, according to Wikipedia is
a form of cake-like confection composed of crushed biscuits (most commonly digestive biscuits), sugar, syrup, raisins, chocolate, and cocoa powder, often covered with a layer of melted striped chocolate. Unlike regular cakes, Tiffin does not require baking. Instead, following preparation of the mixture, the confection is chilled until set. As a consequence the product may also be known as “fridge cake” or another similar term.
I came across Jac’s vegan version over on her site a few weeks ago and was intrigued, having never heard of tiffin in this sense. Now that version looked amazing and I started looking at other recipes around online and looking at what was needing using up in my pantry – cranberries and flaked almonds and – bonus – graham crackers (which I very rarely have on hand so that was great!) – I was all set to make this.

I made a few different versions of this, playing around with quantities of ingredients, and ended up making a small batch version for this post. Unless you’re gifting this, you simply cannot have it in the house – it’s THAT GOOD! It really does lend itself to using up bits and bobs around the kitchen too so it’ll be perfect to use up your handfuls of dried fruit and nuts after you’ve finished your holiday baking. Yep, make this one for YOU!

Each batch of this I found challenging to cut neatly so be forgiving and hey – once you taste it, you won’t care what it looks like!
No Bake Cranberry-Almond Chocolate Slice
Easy no-bake chocolate slice filled with cookies, fruit and nuts - and topped with chocolate!
Ingredients
for the base
- 113g (1 stick/ 8 tablespoons) salted butter
- 1 tablespoon brown sugar
- 1 tablespoon golden syrup
- 2 tablespoons cocoa powder
- 30g (1/4 cup) dried cranberries
- 100g graham crackers or digestive biscuits (approx. 10 graham crackers)
- 25g (1/4 cup) flaked almonds
for the topping:
- 60g (1/3 cup) dark chocolate chips
- 60g (1/3 cup) milk chocolate chips
Instructions
- Lightly grease and line a 20cm (8-inch) loaf tin with parchment paper, leaving some overhang on each side that you will use to lift the slice out of the tin when set.
- Melt the butter with the sugar, golden syrup, cocoa powder and cranberries in a small pot over medium heat, stirring occasionally until butter is completely melted and all ingredients are combined. Remove from heat and cool slightly.
- Break the graham crackers/ biscuits into irregular-sized pieces in a medium bowl and mix with the almonds to combine.
- Pour the melted butter mixture over the graham crackers/ biscuits and almonds and mix to coat thoroughly.
- Pour the mixture into the prepared loaf tin and use a rubber spatula to press it in fairly evenly across the surface of the pan.
- Refrigerate for 30 minutes.
- Melt chocolate in a metal or ceramic bowl set over a pot of simmering water (or in a microwave at 50-60% power in bursts of 30 seconds until it's just about melted and then stir to melt the remainder).
- Pour the chocolate over the base and use an offset spatula to smooth over.
- Refrigerate for 2-3 hours until the chocolate and the base are both completely set.
- Use the parchment handles to remove the slice from the tin and place
it on a cutting board. Use a very sharp knife to carefully cut the slice into 8-10 pieces. The chocolate topping may crack and because the biscuit pieces are irregular shapes, you might not always get a clean cut. It doesn’t matter – once people taste this, they won’t even notice what it looks like 😉
Notes
Slice will keep in an airtight container in the fridge for up to a week. Good luck with that 😉
