The Twelve Days of Holiday Treats!
Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!
The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019, 2020, 2021 and 2022 at the bottom of this post too for more inspiration!
Today’s recipe is inspired by my love of Jam Drops (aka thumbprints), a recent recipe we made a couple of years ago from Dorie’s Cookies (Coco-Almond Thumbprints), and the Hazelnut Chocolate Thumbprint Cookies from the Holiday Treats in 2021.
I love a good thumbprint – jam drops are one of my favourite easy cookie recipes – but I loved that version with hazelnuts and wondered if somehow I could incorporate pistachios since I had leftovers from some recipe development … and with a raspberry or strawberry jam, these could be so festive…. I used seedless raspberry jam here but any red jam will do!

So festive, right?
These cookies come together quickly and easily and use a combination of all-purpose flour (you could use gluten-free flour to make these more inclusive) and ground pistachios. I use the version made by Nuts.com (Psst: Check out Nuts.com for all your baking needs! <<< affiliate link but it’s the one I use!) but it’s easy to grind your own in a spice or coffee grinder.
Pistachio Raspberry Thumbprint Cookies
Easy thumbprint cookies made with pistachio flour.
Ingredients
- 57g (1/2 stick/ 4 tablespoons) salted butter, room temperature
- 50g (1/4 cup) granulated sugar
- 1/2 teaspoon pure vanilla extract
- 1 large egg yolk
- 75g (1/2 cup) all-purpose flour
- 55g (1/2 cup) pistachio flour (from approx 1/3 cup whole shelled raw pistachios)
- Approx. 1/3 cup raspberry or strawberry jam
Instructions
- Preheat the oven to 350˚F. Line a baking tray with parchment paper.
- Beat the butter using electric hand beaters on high speed until it's light and fluffy, approximately 2-3 minutes.
- Add the sugar and continue to beat on high speed until the mixture is creamy and pale.
- Add the vanilla and egg yolk and mix on low speed until just combined.
- Add the flour and pistachio flour and continue to mix on low speed until the dry ingredients are just mixed in.
- Divide the dough into 12 equal portions and roll each portion into a round ball.
- Place each ball on the baking tray and use your thumb to make an indentation on the top of each cookie.
- Bake for 15-18 minutes until the cookies are lightly golden and the jam is set (it will still be a bit jiggly).
- Remove from the oven and place on a wire cooling rack until the cookies are at room temperature.
