The Twelve Days of Holiday Treats!

Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!

The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019 – 2023 at the bottom of this post too for more inspiration!

Today’s recipe is another inspired by The Australian Women’s Weekly The Big Book of Beautiful Biscuits. In their version, they’re called “Muesli Cookies” which was rare in the 70s/80s in Australia to see something called a cookie (we call them biscuits!). On further inspection, the recipe calls for “toasted muesli” which is, in fact, granola – again, something that wasn’t super common when I was growing up – I remember you had to buy this mysterious “toasted muesli” at the health food store.

Well nowadays, granola is ubiquitous and comes in all shapes and sizes – the trick for this recipe is to find granola that doesn’t have too many (or any) add-ins (or make your own – you could use my recipe here and not use any add-ins). The seasme seeds give this cookie a nice subtle unexpected flavour too.

I’ve made these cookies gluten-free by using oat flour instead of all-purpose but they work with either – I tested them with three different types of flour and think I prefer the oat flour texture! They might seem unassuming but they are so tasty and easy to make that once you’ve tasted them, they’ll become part of your regular cookie rotation! I like making these types of cookies for the holidays too because they *feel* a little healthier than other holiday indulgences and they are something different!

Granola Cookies

Granola Cookies
Prep Time 10 minutes
Bake Time 15 minutes
Total Time 25 minutes

Ingredients

  • 90g (6 tablespoons/ 3/4 stick) salted butter
  • 1 tablespoon runny honey
  • 1 large egg yolk
  • 60g (1/4 cup) brown sugar
  • 50g (1/2 cup) plain granola
  • 60g (1/2 cup) large flake (old fashioned) rolled oats (NOT quick cook or instant)
  • 40g (1/2 cup) shredded coconut
  • 40g (1/3 cup) oat flour (you can also use all-purpose flour here)
  • 1/2 teaspoon baking powder
  • 2 tablespoons sesame seeds

Instructions

  1. Preheat the oven to 350˚F and line a baking tray with parchment paper.
  2. Melt the butter, honey and sugar together in a small pot on the stovetop, stirring until the sugar is melted. Set aside to cool slightly.
  3. Mix the granola oats, coconut, oat flour, baking powder and sesame seeds together in a medium bowl.
  4. Whisk the egg yolk into the melted butter.
  5. Add the wet ingredients to the dry and mix until combined.
  6. Use a 1 1/2 tablespoon cookie scoop to portion the mixture into 12 scoops of dough. Place each cookie on the baking tray around 4cm (1.5-inches) apart. Use damp fingers to flatten these slightly (be careful as the dough is soft!).
  7. Bake at 350˚F for 15 minutes until the cookies are golden all over and slightly more golden around the edges.
  8. Remove the tray from the oven and carefully transfer the cookies on the parchment only to a wire cooling rack to come to room temperature.

Notes

Cookies will keep for around 5 days at room temperature in an airtight container.
