12 Days of Holiday Treats: Chocolate-Dipped Wafer Cookies

Welcome to Day 2 of

The Twelve Days of Holiday Treats!

Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!

The recipes I’m sharing are small-er batch (as many of us will still be attending/ hosting smaller gatherings) – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019, 2020 and 2021 at the bottom of this post too for more inspiration!

Today, it’s more about a NO-BAKE treat that you can whip up in no time if you need a last-minute sweet treat. This came about as I was hunting through my pantry to check my sprinkle stash (essential at this time of year) and came up not only with holiday sprinkles from Sweetapolita but also wafer cookies.

Now, while I can totally eat a bunch of these with no extras, these are immeasurably better dipped in chocolate with sprinkles on top! And they take no time to make! Better yet, these are holiday treats that the kids can help with! So, let’s get (not) baking!

Yield: as many as you want!

Dipped Wafer Cookies

Easy dipped wafer cookies - a great last-minute holiday (or anytime!) treat!

Materials

  • Wafer cookies
  • White (or other) chocolate
  • Sprinkles
  • Parchment paper
  • Small microwave-safe bowl
  • Baking tray

Instructions

  1. Line a baking tray with parchment paper.
  2. Melt chocolate in a metal or ceramic bowl set over a pot of simmering water (or in a microwave at 50-60% power in bursts of 30 seconds until
    it's just about melted and then stir to melt the remainder).
  3. Take one of the wafer cookies and either dip it into the chocolate if it's not deep enough, use a small spoon to pour the melted chocolate over one side of the cookie and smooth it over.
  4. Place the dipped cookie (dipped side up) on the parchment paper and sprinkle the sprinkles (!) over the top. Continue until you have as many as you want.
  5. Place the tray in a cool place or in the fridge so the chocolate sets.
  6. Store in the fridge (but know that the wafer cookies will get a little soggy the longer they stay in the fridge).

Notes

Best enjoyed the day they are made.
