The Twelve Days of Holiday Treats!
Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!
The recipes I’m sharing are small-er batch (as many of us will still be attending/ hosting smaller gatherings) – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019, 2020 and 2021 at the bottom of this post too for more inspiration!
Today’s “treat” is a little different – a jam you can enjoy all through the holidays! After the success of last year’s Mulled Wine Jam, I’ve gone and added some mulling spices to the cooking process for a “shredless” (i.e. smooth) marmalade that makes the house smell like Christmas while it’s cooking and that will bring the holidays to your breakfast table (or your anytime toast!)well beyond the holidays! I loved how smooth this jam (really a jelly) came out
This recipe actually came about because I had loads of oranges that needed to be used up… and I thought about marmalade but realised that these were just regular oranges, not Seville oranges typically used for marmalade. I also wanted a “shredless” recipe (no orange peel for me, thanks!) so after a bit of research (Amy Bronee’s EXCELLENT The Canning Kitchen – you can read my review here) and then Camilla’s website, Fab Food 4 All, I figured that I could use regular oranges and it wasn’t too tricky to remove the peel…

Holiday Spice Marmalade
Shredless marmalade made with regular oranges and infused with mulling spices. Perfect for the holidays!
Ingredients
- 1/2 batch of Simple Shredless Orange Marmalade (recipe linked below)
- 2 tablespoons mulling spice
Instructions
- Measure out ingredients to make 1/2 batch of Simple Shredless Orange Marmalade.
- Once you have cooked the oranges, cut them into quarters, removed the pips, and pith and cut the fruit into thin slices.
- Add everything back to the pan with 2 tablespoons of mulling spices bundled in a few layers of cheesecloth and tied closed with kitchen twine.
- Bring the liquid and pulp to a boil and then add the sugar,reducing the heat and keeping the heat low until the sugar is dissolved (stirring with a wooden spoon all the time).
- Once sugar is dissolved bring to the boil and boil hard for 12 minutes, still stirring.
- To test for doneness, place a few drops on a saucer and put in the fridge for 2 minutes, if it forms a gel-like crinkle when pushed with your finger it is ready. Otherwise continue boiling for 3 minute intervals and re-testing after each 3 minutes (mine took 18 minutes). You can also use an instant-read thermometer (you're looking for approx 220˚F or 100˚C)
- Skim off scum, with a spoon, leave to cool a few minutes then strain the marmalade through a metal sieve in stages squeezing the contents of the sieve with the back of a spoon.
- Follow Camilla's instructions to fill the jars: Use a small ladle to fill hot sterilised jars and seal with lids or wax discs (allow to cool before topping with cellophane disc and rubber band).

I loved this – Neil found it a tad sweet because he’s a HUGE marmalade fan but I typically don’t like the bitterness so this was perfect for me! I’m excited to have the flavours of the holidays to enjoy beyond December, too!

It does look great.
It’s like a jelly but a little runnier consistency than store-bought.I loved it!
