Tuesdays with Dorie: Lisbon Cake from Baking with Dorie

This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Lisbon Cake is not only the cover photo from Baking with Dorie but also the LAST recipe  I’ll be posting from this book! I can’t believe we’re nearly finished working our way through it! This will be the SIXTH book I have cooked my way through in the last 16 years –  Around my French Table, Baking Chez Moi, Dorie’s Cookies, Everyday Dorie (plus David Lebovitz’s My Paris Kitchen!).

This particular cake came about after a trip to Lisbon where Dorie tasted this cake at Landeau Chocolate (note to self: plan a trip here!). It has a brownie-like bottom layer, is topped with a whipped chocolate ganache and then dusted with cocoa powder, (in Dorie’s case) or white chocolate shavings (as I did). It’s impressive and gluten-free, naturally, so I chose to make it back in September for a celebration and it was perfect.

This was not a difficult cake to make but I did have a few issues with the ganache. Dorie says the ganache will be “spreadable like a frosting” after 60 minutes in the fridge with some stirring from time to time. Mine was liquid after 2 hours so I took to the internet to see how to thicken a ganache and found out you could just use electric hand beaters – well, isn’t that just life changing?! Not sure what I did wrong but this was a good hack to learn!

Cake stays in the fridge for a few hours before serving and I have to say, it cut beautifully!

Ignore my wonky slice here!

Ok a warning to those who make this, expecting it to feed 10 people. I will say it makes 10 servings but I took this to a dinner with four of us and we each had TWO slices. It was SO good. Not heavy, not too sweet, it was totally addictive!

What a sweet note to end baking our way through the book!
