The 12 Days of Holiday Treats!

Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!

The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019 – 2024 at the bottom of this post too for more inspiration!

Today’s treat is inspired by a childhood favourite – White Christmas!

White Christmas is a bit of a blast from the past – and a polarizing recipe at that. Every year at my Nana’s Christmas Eve family party there would be a dessert table and every year she would make this recipe, even though noone really, truly loved it. I remember it being super sweet – one of those things you had a tiny piece of each Christmas because, well, tradition…  I know it’s something that people either truly love or really can’t stand…. It’s made from white chocolate (or coconut oil and milk powder), coconut, glacé cherries, rice bubbles (Rice Krispies) and cut into small squares – it’s REALLY sweet!

I made a version of this back in 2019 and wanted to revisit it here as something smaller, a bit more refined. I removed the  cereal and replaced the glacé cherries with cranberries and slivered almonds. These are made with a tablespoon of mixture and set in a mini muffin tin liner so they are easy to serve and eat!

I was really pleased with how these came out and – bonus – you could make these well in advance for holiday entertaining!

White Christmas Bites

White Christmas Bites

Easy, no-bake white Christmas bites, updated with cranberries and almonds!

Prep Time 15 minutes
Chill Time 30 minutes
Total Time 45 minutes

Ingredients

  • 100g (approx. 1/2 cup) white chocolate chips
  • 50g (1/3 cup) dried cranberries
  • 50g (1/3 cup) slivered almonds
  • 30g (1/3 cup) shredded unsweetened coconut

Instructions

    1. Melt the chocolate in a microwave-safe bowl big enough to hold all the ingredients at 50-60% power for 1-2 minutes in 30-second bursts. Alternatively, you can place the chocolate in a bowl over a pot of boiling water (don’t let the bottom of the bowl touch the water) and stir until the chocolate is melted.
    2. Mix in the cranberries, almonds and coconut until they are evenly distributed through the chocolate.
    3. Use a 1 tablespoon cookie scoop to portion the mixture into 12-14 mini cupcake liners (you can place them in a mini cupcake pan if you like until they are set).
    4. Refrigerate until completely set.

Notes

These will keep for a week or so in an airtight container in the fridge (lol, try to make them last that long!). Bring them to room temperature for a few minutes before serving.
