
This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. My Favorite Pumpkin Pie was destined to not be MY favourite because I am not a fan of the texture but I still made it… minified, of course!
I had some leftover punpkin purée from the Cocoa-Swirled Pumpkin Bundt Cake that I had frozen – just enough to make a half recipe of the filling for this recipe which made 6 tiny tartlets (pre-made crusts I had in the freezer needing to be used up!) and four ramekins of *just* filling (for a GF neighbour).

I baked these for about 25 minutes and they were perfect – even the crustless ones – and they were delivered to neighbours and devoured in less than 30 minutes. Texts from both houses confirmed this was the best pumpkin pie filling EVER!
Not my thing, but I’ll remember this next time I need a pumpkin-y dessert! With store-bought tart shells, it’s so easy!

The little pumpkin pies are adorable, wouldn’t it be fun to get one’s very own little pie! We, too, thought this was an excellent recipe. Might be my new go-to. I’m definitely marking in my book to try them as minis, very fun and pretty!

Making minis is a great idea for many reasons. I love pumpkin pie, but I prefer mine very spicy.
