Tuesdays with Dorie: Fall Harvest Cake from Dorie’s Anytime Cakes

This week’s Tuesdays with Dorie recipe comes from Dorie’s latest book, Dorie’s Anytime Cakes!

This cake has it all – fresh and dried fruit and nuts and is a lovely loaf for anytime of the day. Of the fruit, Dorie says:

The fresh fruit: Use what’s in season and what you’ve got on hand. The recipe was written for an apple or pear, but I played around while in Paris.

The dried fruit: It’s nice to add small bits of dried fruit to the batter for surprise, color, flavor and texture, but the fruit’s got to be soft and the pieces have to be very small. So take scissors to the chunky bits and then give all of the fruit a quick soak in hot water and a pat dry, if it’s a bit tough. I like dried cranberries, raisins and apricots here, but choose your own mix or go with just one kind of fruit.

I used cranberries and walnuts because that’s what I had on hand. I happened to have some grapes from our produce box (though I would not have bought them out of season like this) so I used a few of those on top. I used an apple as the main fruit.

It’s a cake that comes together quickly and isn’t difficult – it works with lots of different ingredients so you can use what you have on hand. I made half the recipe in a 8 x 4-inch loaf tin because I had already a baked a LOT this past weekend and didn’t need a whole huge cake on hand too! This worked out perfectly!

I sprinkled the top with some demerara sugar  for a little bit of added crunch so I didn’t use the optional glaze though it would have looked pretty!

This is a lovely plain (but not too plain) cake that you can enjoy anytime of the day – a good base recipe to keep in your back pocket and work with whatever ingredients you like!

  1. What a pretty cake…all your choices really look lovely. Good call on the size as I made the full recipe and we are going to have cake for days and days so I’ll be looking for places to gift this around. It was delicious. I used green grapes as that is what we had on hand, but I have to say the darker grapes you used really add to the beauty of the cake. Next time.
