This week’s Tuesdays with Dorie recipe from Baking Chez Moi – is a classic French dessert and one of my favourites. Sweet shortcrust pastry, crème pâtissière and fresh fruit, sometimes glazed, sometimes just dusted with icing sugar. I mean I love this recipe and dessert so much that there is a strawberry tart recipe in my upcoming cookbook:
I regularly teach this recipe in my (adult and child) classes.
Dorie’s recipe is more a formula than a recipe – though both the pastry and crème pâtissière recipes are in the book, once you know how to make both and you have access to fresh berries, the sky’s the limit in terms of what you combinations you can make.
For once, I didn’t minify this recipe because I knew I had company coming and a large tart wouldn’t go to waste or be too much to eat for two people – it’s actually been a while since I made a full-sized dessert!
I was totally planning on glazing this but by the time it was dessert time, it just felt like too much work (PSA: it isn’t too much work, but in the middle of an excellent dinner with friends, I didn’t want to be stuck in the kitchen fussing…). Icing sugar to the rescue!
