Tuesdays with Dorie Dorie Greenspan pistachio berry slims on eatlivetravelwrite.comThis week’s Tuesdays with Dorie recipe from Dorie’s Cookies was a variation on old-style macarons (the kind that everyone can make!) – ground nuts, egg whites and sugar.  Dorie says:

These are among the most elegant cookies I make. They have the looks of a confection you’d find in a Viennese pastry shop; the texture of a favorite childhood macaroon (indeed, these are macaroons, classy ones); the pure taste and brilliant color of pistachios; the sweetness and glisten of rasp- berry jam; and the beauty and sweet-tart flavor of fresh raspberries. That they’re also easy adds to their mystique. Serve them, and if you don’t want to admit that you prepared them in 10 minutes, don’t.

Dorie Greenspan pistachio berry slims on eatlivetravelwrite.comIt’s true, these came together in just a few minutes, though I found shaping the log a little challenging and wondered whether this might be able to be rolled into balls and turned into thumbprint cookies?

I halved the recipe and it was a perfect amount to snack on as I prepared to leave (and I shared a few with friends too!). It’s actually a great snack because it’s not super sweet but also because of the nuts, you really only need a little to satisfy you.

    These look amazing! I love the colours.
    I’m wondering if coconut will work, pistachio is one our anaphylactic nuts.

    Lol on the “macaroons, the kind everyone can make,” too funny…and true! These look so interesting and unique. They look beautiful. I do like the thumbprint idea you suggested…as you said, for the shaping and the eating. 🙂

    I love your thumbprint idea. I would have liked these to be a little sweeter, but I liked the appearance of them.

    I will be making a half recipe also. They look so pretty. My husband and I love pistachios so we will like these.

    I really like the idea of these as a thumbprint cookie, but the thinly sliced version looks so elegant!
