These are among the most elegant cookies I make. They have the looks of a confection you’d find in a Viennese pastry shop; the texture of a favorite childhood macaroon (indeed, these are macaroons, classy ones); the pure taste and brilliant color of pistachios; the sweetness and glisten of rasp- berry jam; and the beauty and sweet-tart flavor of fresh raspberries. That they’re also easy adds to their mystique. Serve them, and if you don’t want to admit that you prepared them in 10 minutes, don’t.
It’s true, these came together in just a few minutes, though I found shaping the log a little challenging and wondered whether this might be able to be rolled into balls and turned into thumbprint cookies?
Might make them easier to eat as well? I halved the recipe and it was a perfect amount to snack on as I prepared to leave (and I shared a few with friends too!). It’s actually a great snack because it’s not super sweet but also because of the nuts, you really only need a little to satisfy you.
