This week’s Tuesdays with Dorie recipe from Dorie’s Cookies was Anytime Tarragon-Apricot Cookies – an intriguing combination of ingredients that I couldn’t wait to make! Unfortunately for me, I wasn’t able to locate fresh tarragon at short notice (I wanted to get these baked and handed out to neighbours before I left for 10 days in Spain where I’m walking the next stage of the Camino from Logroño to Burgos – follow along on Instagram!) so I did a little bit of reading up to see what other fresh herb might work well with apricots.
Luckily for me, it looked like rosemary was a winner (I have fresh rosemary in our garden in France right now) so I went with that. I made a half batch but definitely didn’t use as much of the rosemary as recipe called for because it looked like a LOT and since I was already changing things up, I wasn’t sure if that quantity would work – not all herbs are interchangeable at a one-for-one ratio. I used maybe 1/2 of the amount called for.
The result? A lovely sweet, slightly salty shortbread with chunks of chewy apricot and a hit of rosemary every now and then. In hindsight I could absolutely have used more rosemary and definitely will try them again, both with the recipe’s suggested tarragon as well as rosemary (not together). The cookie itself, on its own wouldn’t be bad either! 😉
