Tuesdays with Dorie: Mary Dodd’s Maple-Bacon Chocolate Chip Cookies from Baking with Dorie

This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Mary Dodd’s Maple-Bacon Chocolate Chip Cookies have a lot going on!

These cookies are fairly easy to whip up – you need to have cooked bacon and also bacon fat – I cooked my bacon strips and used the fat that rendered from there in the recipe. It needs to be cool so make sure you account for that. Apart from those ingredients, these are your typical CCC – only with white, dark and light brown sugars as well as maple syrup. When I tasted the batter, I didn’t much like the strong bacon fat taste and wonder if I could have amped up the actual bacon bits and left that out. It tasted, well, porky…. The baked cookie to me, tasted too sweet – the tops are brushed with maple syrup before baking and I wonder if they needed it?

I made half the batch of dough which made 7 ENORMOUS COOKIES (that is a half sheet pan below, only fitting 3 on it!), using a 1/4 cup cookie scoop. The recipe doesn’t call for the dough to chill and I wonder if they might have been a bit smaller had I chilled the dough. I do find the ingredients (chocolate chips and bacon bits) were spread out and wonder if a smaller scooped cookie might have grouped them together better for more flavours in one bite?

The result is a crispy-on-the-edges, but soft cookie with caramel notes, and, to be honest, not much bacon flavour – there is “something” as Neil mentioned when he blind tasted them, but he couldn’t put his finger on it.

These are very thin cookies so you need to make sure you get the “wrinkles until nearly the centre” without the rest of the cookie getting too crispy. Mine took 14 minutes at 375˚F.

Would I make these again. Probably not with the bacon fat and I would definitely scoop them smaller and chill the dough before baking.

  1. “Something”, yes – but something yummy. 🙂 Oddly at first sniff my mind went to ginger. Hmm.

    At any rate, luckily they are thin as they’re huge – a wonderfully decadent dessert treat.
