Tuesdays with Dorie: Meringue Snackers from Baking with Dorie

This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Meringue Snackers sounded like a nice, easy recipe to me – that is, until I realised with one day’s notice that this post was due this week. Meringues need time more than anything and I was running out this past weekend! Cue panic in the kitchen. No matter, actually – it turned out to be quite serendipitous!

I happened to be working on a lemon “pot de crème” recipe (for my French (food idiom) Fridays series) and had exactly 2 leftover egg whites – enough to make 1/2 a recipe of Snackers (3). I figured I could use the lemon cream to make these into little pavlovas, although I wondered at the bake time – I thought they might be too hard to be pavs (and I was right).

I made these early in the morning on Sunday, baking them for 1 hour and 30 minutes (15 shy of the recipe). At that point, Dorie says to open the oven door and let accumulated steam escape (there was none) and them leave them in the warm oven for 2 hours until they can be easily peeled off the parchment. Mine were able to be peeled off the parchment immediately after baking but I left them in the oven anyway and wished I hadn’t. They were exactly what the recipe promised – meringues as opposed to little pavs (with a marshmallowy centre).

Don’t get me wrong, they were DELICIOUS meringues but I prefer a softer centre, so next time I would bake these at maybe a lower temperature or for less time. I forgot how easy meringues are to make (and so satisfying!).

I served these with the lemon cream (delish!) and some berries – a fancy plate for neighbours (top pic) and a less fancy plate for us 😉
