Tuesdays with Dorie: Cranberry Spice Squares from Baking with Dorie

This week’s Tuesdays with Dorie recipe is Cranberry Spice Squares from Dorie Greenspan’s Baking with Dorie. These squares felt like a nice segue into the post-Hallowe’en/ pre-Christmas (or I guess, pre-Thanksgiving if you are in the US) season where sometimes the temperatures make you want to bake allllll the holiday goodies but it’s (really) still too early.

These “spice bars” remind me a lot of gingerbread (NOT gingerbread cookies, the cake version) but with ‘the ping” of fresh cranberries (I used frozen and was happy they didn’t “leak” into the cake) – it’s a sturdy cake with a lot of flavour and the cranberries give each bite a nice, fruity surprise! Not sure why I didn’t choose a piece to showcase the beautiful ruby tones of the fruit in the photo?!

This came together easily – I used a loaf pan to make 1/2 of the recipe and 10 squares. Mine took 35 minutes to bake fully through inside. At 25 minutes a toothpick was still coming out with raw batter stuck to it. Maybe mine are slightly thicker than had I baked the full amount in an 8 x 8-inch tin.

I really enjoyed these – a subtle spice, a hint of fruit and, of course (debatably the best bit) the cream cheese frosting

  1. Haha…I was thinking oh, she didn’t use the cranberries! You made me laugh! These were really good and surely ushered in the fall baking season!

  2. Beautiful photo of these, even if we can’t see the cranberries. Looking forward to making these when Matt is home to help eat them next week, because these look a little too good to be able to trust a full recipe hanging out here on its own. Can’t wait to see what you do with the tart…it was easy, fun, and delicious.
