You know you’re a dedicated Tuesdays with Dorie baker when you get off a 21 hour flight and you tell your mum “We need to bake a cake today so I can post about it tomorrow!” Thankfully, the Tuesdays with Dorie recipe from Baking Chez Moi this week was a super easy one, and one I knew would appeal to both dad and mum, though I also knew we’d be minifying it (not needing a whole loaf for just three of us).
I was planning on making this in regular muffin tins for apple cupcakes but as soon as I saw mum’s pretty friand pans, I changed my mind. This is a simple cake recipe with cubes of sweet apple folded in to create a “substantial cake with a compact crumb.”
We halved the recipe to make six friand-size cakes which were perfect (if on the large side) single-serve desserts.
