Tuesdays with Dorie (Dorie’s Cookies): Lemon sugar cookies

I can hardly believe I even got these baked last weekend (my manuscript was due yesterday!) but I did. It’s amazing how baking has become like therapy for me. I baked a few things on the weekend actually when I needed a break from the screen. And these cookies couldn’t have been simpler. As Dorie says, this lemon sugar cookie is:

is an easy one – scoop, round between your palms, roll in sugar and bake – and a sweet beloved by all who enjoy the bright flavor of lemon.  I use lemon zest and juice to get a nice, not-too-bold flavor, but if you want more pop, add about 1/4 teaspoon of pure lemon oil or extract to the dough.

I baked a 1/2 batch, kept a few (because writing is hungry work requiring treats) but packaged most of them up to send to the lucky folks at Neil’s curling club. It was their final night of the season and it was a potluck dinner. Not one crumb of these came home. I was happy I’d saved a few for the final day of writing for myself though. It’s important to be kind to yourself, right? 😉

    The lemon cookie filling up the frame of the picture looks spectacular. You can see all the delicious details, making you hungry for one. Congratulations on finishing the manuscript!

    You gotta be kind to you. I love that you live somewhere where curling is played. Your cookies look scrumptious. I have saved 2 for my boyfriend – will they last til he gets them?

    I’m so excited for your big accomplishment with the manuscript, and just your mention of curling brought back all kinds of memories from when my mom would be at the rink all the time!

    Hooray for finishing your manuscript! You absolutely needed to be kind to yourself after that and these look like a gorgeous way to celebrate. I agree with you on baking as therapy. If my mind needs calming or I have to work through an idea or problem, it’s either a long walk with the dog or a baking session for me. (Also, yay to curling! It’s the only sport I’ve even been any good at.)
