Tuesdays with Dorie: Berry Yoghurt Cake from Dorie’s Anytime Cakes

This week’s Tuesdays with Dorie recipe comes from Dorie’s latest book, Dorie’s Anytime Cakes. Berry Yoghurt Cake sounded like a fabulous way to welcome berry season and also a fabulous recipe to make for the final cooking club session this year!

It was all hands on deck to get this done and because we only had a short session (1 hour start to finish) I decided to minify the recipe – not making less but instead of baking one large cake, baking the recipe as cupcakes.

First we zested some lemons…

Then we rubbed the zest into the sugar:

Then cracked eggs into the sugar:

Did a little whisking (added the vanilla here too)…

Added the dry ingredients:

And finally the berries:

Then we used cookie scoops to evenly portion the batter…

All ready for the oven!

While the cupcakes baked (25 minutes bake time)we did a big cleanup of our space (final session of the year oblige!) and were rewarded with the most beautiful cupcakes:

A dozen very happy little bakers left the school that day with precious cargo! I would definitely make this again as a full-sized cake but cupcakes worked well too!
