
This week’s Tuesdays with Dorie recipe comes from Dorie’s latest book, Dorie’s Anytime Cakes. Corn Toasties are “giant” muffin-sized cornbreads. Since I don’t have giant muffin pans, I took one of Dorie’s “Playing Around” suggestions and made half the recipe into a small family-sized cornbread instead.
It’s a simple recipe that comes together quickly with excellent results. It produces a sturdy cornbread that is excellent warm with a chili or with a slather of butter, even! We happened to have chili in the freezer and enjoyed this combo!

I liked this but wondered about maybe putting some corn kernels in the batter for a bit of texture interest? In any case, this is a recipe I will keep in my back pocket!
