This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Maple Walnut Pie sounded delicious to me but my other half doesn’t like walnuts (!) or pecans (!) so because I don’t even need two tiny pies to myself, I went with slivered almonds which is what I had on hand.
Knowing this was what was coming up on the baking calendar, I had also put away 1/4 of a recipe of All Butter Crust from when I made the Tarte Tatin a couple of weeks ago and this was enough to make 2 small versions of the pie (using a 4 1/2 inch mini tart pan <<< affiliate link but they are SO useful!). I made 1/3 of the filling (divided down by the number of eggs) but had leftover filling – enough for at least two more. Next time if I was making mini tarts, I’d use a splash of egg white from a carton to make less quantity of the filling so less waste.
These were actually super simple to make, especially as the pastry was already made. I blind-baked the pastry shells the night before I filled and baked these and they came together in a flash. Served warm with a scoop of ice-cream, it was a perfect dessert (1, split is perfect for 2 people!).
I’m already looking at these and wondering about REALLY minifying them for a dessert table over the holidays! So many possibilities!
