This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Chunky Lemon Cornmeal Cake was the perfect way to ease back into real life and baking after the holidays and I whipped this up between naps on the weekend (hellp jet lag!).
Because it’s been a fortnight of lots of treats and we brought a lot of treats back from France, I halved the recipe to make one mini-loaf (<<< affiliate link but I love my mini loaf tins!) – and 2 muffins with the leftover batter – which was the perfect amount of cake for us right now! This is a “chunky” cake because it contains both lemon zest and chopped-up pulp from the lemon and it certainly packs a lemony punch.
The specks you see in the cake which might make you think of poppyseeds is actually sumac (<< affiliate link but it’s a good spice to have on hand). It’s a citrussy, slightly smoky spice that Dorie likes to use and it works well here (thoguh you can use extra zest if you don’t have it).
We loved this – the chunky lemon, the slight crunch from the cornmeal, and how it was not so sweet (also came together in one bowl with just a rubber spatula so a perfect easy bake to start the year!).

I did like the ease of this one…and wish I had just gone with lemon. Maybe it is a stronger flavor that orange in a cake 🤷♀️
