Cook the Book Fridays: Tomato and Berry Gazpacho from Everyday Dorie

This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie. Tomato and Berry Gazpacho was something I wasn’t sure about so I figured it was the perfect thing to serve at a summer drinks event so that everyone got a small amount IN CASE people didn’t like it. I just wasn’t sure about a gazpacho with strawberries…

This is the easiest recipe ever – strawberries, tomatoes, basil, mint, white wine vinegar, green onions, ginger, lime juice, olive oil and a touch of harissa (I used piment d’espelette and actually could have used more). You blend all of this to you liking (I like smooth gazpacho, typically) and then it sits in the fridge for a few hours. You’ll need to stir it before you serve.

I served tiny shots of this and had everyone guess the ingredients. They missed strawberries, ginger and lime because it really is an intriguing flavour. Everyone had seconds and everyone asked for the recipe! I’d say that’s a win.

The only down side of this is that it’s a weird colour – mine looked like strawberry smoothies LOL. I figured if I played around with  the ratio of berries and tomatoes to change the colour, it would mess with the taste. The thing is, noone said anything or noticed the colour except me 😀
