This week’s Tuesdays with Dorie recipe is Caramel Apple Crisp from Dorie Greenspan’s Baking with Dorie.
As I was reading the recipe for Dorie’s version it struck me as familiar and I wondered if I had made this before. In fact, a couple of years ago I made my own version of this – Salted Caramel Apple Crumble – which I had forgotten about for no good readon because it is absolutely delicious!
In Dorie’s version, there doesn’t seem to be as much sauce – mine soaked it up during the cooking process, but the concept is the same (great minds, huh?):
- make a caramel sauce
- make a crumble/ crisp topping
- bake the apples in the sauce topped with that buttery crisp/ crumble
- Enjoy!
Though there are a few steps, it really couldn’t be simpler AND, Dorie suggests you can assemble the dish and freeze it then bake from frozen – a perfect make-ahead dish for the holidays! Imagine having one of those in your freezer for emergencies?!
I served this for a “Friendsgiving” dinner on Friday night and even though I forgot one of the apples, it was gobbled up. Not one scrap left (and hence the less-than-stellar photos – less focused on those than the company which is a good thing!). And yes, dad because I know you read and will ask – the topping WAS crispy!

This apple crisp is delicious to make several for freezer emergencies, especially during the apple season.

Yes great minds think a like, you both are wonderful bakers. I had the opposite reaction as mine was very soupy. I guess it depends on the apples. My topping was crispy too which was really nice.
