Tuesdays with Dorie: French Vanilla Sablés from Dorie’s Cookies

This week’s Tuesdays with Dorie recipe from Dorie’s Cookies was French Vanilla Sablés (p 332). Dorie says:

I’ve always thought of the sablé as the perfect butter cookie, the one all shortbread strives to equal, and in this recipe I think you have the model cookie — it’s rich, as it should be; sandy, as it should be; flavorful; and memorable. It’s basic but in no way ordinary.

She also mentions this was the “crown jewel” in the Beurre & Sel (her now-closed cookie business she ran with her son) collection and that, despite the fact that it might “sound” plain, it was often the first cookie someone tried at the store and then “it was the one that brought them back to try all the others.”

These sablés are the base for all Dorie’s Jammer” “cookies” (yep, we’ve made a few!) and come together very quickly. Once again, with these, my finished product doesn’t look like Dorie’s and was thinner than the goal cookie. I rolled the dough to 1/4-inch thickness but when they bake (in muffin tins) they spread slightly so they aren’t as thick when they are baked. Next time I will roll these even thicker to start with. I also don’t have sanding sugar (still!) so I used raw sugar for a bit of a different look (note to self: MUST BUY sanding sugar!).

The taste though? SO good – buttery and rich with a lovely light sandy texture. These ARE classics!
