
This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie.
Portuguese-Style Cod and Beans en Papillote is a lovely recipe that’s easy to prepare that feels fancy, even on a weeknight! You can prepare it a few hours in advance or just before you cook it – either way, it’s a good reminder that the “en papillote” method (baking in parchment pouches) is a wonderful way to infuse flavour.

Fish is seasoned with paprika, salt and pepper and laid on a bed of lemon slices, white beans, olive oil, balsamic, some tomato slices (I used cherry tomatoes because that’s what I had on hand), then topped with scallions, more tomatoes, lemon, white wine, a little more olive oil and thyme.
Wrap it up tightly. You can bake it now or leave it up to 8 hours in the fridge (I let mine sit about 4 hours) then bake for about 15 minutes. The fish cooks beautifully – basically you’re steaming it so it’s hard to overcook it.

Nope, I didn’t rub my fish evenly with paprika but it was still delish! We ate this with steamed rice and roasted tomatoes and it was a wonderfully fancy meal with very little effort. A winner!

I had so many wines open in the final week before my CMS exam I honestly cannot remember what I had on hand to pair with this. But something bright and light is best…I had Chablis, Italian Pinot Grigio, Australian Clare Valley Riesling all at hand. 🙂
