This week’s Tuesdays with Dorie recipe from Dorie’s Cookies is a classic for the holiday season!
Dorie says:
My son, Joshua, and I have a thing for the mint-and-chocolate combo. We tried gooey cookies and chubby ones, sandwich cookies and cakey ones, and, in the end, we were surprised by our final choice: this sleek and simple sablé.
Now, just coming on the heels of my 12 Days of Holiday Treats series of recipes, I was pleased these were simple to make but also not over the top outrageously sweet because we’ve had SO many treats in the house lately!
These are classic sablés – buttery and delicious – and this iteration contains not only cocoa powder but chopped chocolate (as well as mint extract). Mine actually contain crushed candy canes instead of chopped chocolate because at the time of adding the chopped chocolate, I realised that I only had “callets” (baking chips) that I didn’t want to fuss with chopping (it was a busy weekend!) but I spied crushed candy cane that I had left from the holiday treats and figured “why not?”. It mixed in well and I figured it would look pretty – you can see it in some of the cookies but I would use more next time (I made 1/2 batch of the recipe for 20 cookies and used about 2 tablespoons…)
Dorie has you roll the dough for, then chill, then cut out and bake in muffin tins (or cookie rings). I never think I roll these types of Dorie’s cookies thick enough (compared to what hers look like in the book) and, indeed I had leftover dough (not much but a bit) when I had cut out 20.
My cookies were not buttery melt-in-your-mouth sablés (which are kind of like shortbread normally) but ended up rather soft. I was worried I had overbaked them (baked for 12 minutes) because mine were thinner than Dorie’s (I think?) and that they would be crunchy but the texture was on the soft side (perfect for Mr Neil as he awaits some dental work, actually!). I liked this a lot but not sure it’s how it’s meant to be. Maybe if I follow the recipe and put in chopped chocolate next time the texture will change? In any case, these were delicious – not too sweet and just right with a cup of coffee mid-morning.

crushed candy canes– i like that! you know, mine were on the softer side, too, and i figured it was because they had chopped chocolate. haha. who knows, but i didn’t’t mind it either, though.
Candy canes sound like a great idea. Hopefully things will slow down for you now.

I love the idea of adding the candy canes to the batter = perfect to amp up the mint flavour. Mine were soft too, which is fine by me.
Thank you for creating this blog, Mardi. I am baking my way through “Dorie’s Cookies” and enjoying the ride. This recipe combines my husband’s favorite flavors. My only pause is that 1 tablespoon of mint extract seems to be a lot compared to other recipes I’ve tried. How strong is the mint in this cookie?
Hi Erin, Well it makes a LOT of cookies (can’t remember offhand but I don’t think 1 tablespoon is too much for the amount it makes). I mean, I even added extra mint flavour with the candy cane and it wasn’t overly pronounced.
