The Petits Chefs are back this week with one of my favourite recipes from In the French kitchen with kids!
When I was developing the recipes for the book, I was fortunate enough to be hosting in-person cooking club in a perfect space for it and the kids spent a term testing recipes for the book! We did the final tests for the Mixed Berry Galettes right there in the old STEM lab and I’m so grateful to the students for helping me with those final details (you can read all about it here!).
This week, in a classroom-come-food prep space, we managed to make these beautiful galettes but it was a push, even in 75 minutes. Less equipment and less-than-ideal work surfaces (too-low tables pushed together) makes for a much slower pace but we got there in the end!
You can tell when it’s a busy session because I don’t have very many photos – case in point – NO photos of rolling the pastry!
But proof we got it done! I made the pastry at lunchtime and it sat in the fridge until after school because it does benefit from a rest in the fridge. I demoed the pastry (in a food processor) while the galettes were baking.

And then the fun part – we got assembling! Always my favourite part!
Kids always do a good job with galettes!
Adding eggwash and “a touch of sugar” (err… some of them had more than a touch but it didn’t matter!).
And then we cleaned up as they baked… (no photos of that, it was just a tiny bit chaotic LOL!)
“Mine leaked”
I told then that if they leaked then they were even tastier – all that goodness from the berry juice! It’s tru and look how lovely they are!
16 kids, 75 minutes, not bad…
