If spice cookies are good alongside coffee — and they are — then wouldn’t they be even better with coffee in them? That was the question I asked myself and these cookies are the affirmative answer.
These have freshly ground espresso in the dough (you can use what- ever coffee you’ll be drinking with the cookies or, in a pinch, instant espresso powder — but don’t use as much: 2 teaspoons does the trick) and I love that you can see the specs in the cookies. And although there’s cinnamon in the mix, it’s the addition of cardamom that makes these cookies extra-special. The cardamom blends so beautifully with the coffee and cinnamon that it’s elusive, but it adds spice and warmth.
I’ll admit that I’m not as much of a fan of cardamom as Dorie seems to be (she sneaks it into a lot of cookies!) but there’s only a tiny amount in here so I was game to try. The amount of cinnamon seemed like a LOT (1 whole teaspoon for a half-recipe) so I reduced that. Loved the kick from the coffee (I used instant coffee powder) and the cardamom wasn’t too evident so this made a nice, light spice cookie. I did find the dough rather crumbly, not as wet and sticky as the recipe suggested so it was a bit hard to work with when rolling and cutting. Fortunately they are easy to squish together before they bake 😉 I glazed the tops of these as per the option and loved the sweet combined with the spice. These are a nice option for a holiday cookie (they would be perfect for a cookie exchange) although I still do prefer spéculoos 😉
