
This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Tenderest Shortbread is a “keep it in your back pocket” recipe because it’s so easy and SO GOOD! The melt-in-your-mouth texture comes from two egg yolks (originally an accident when Dorie added both yolks to a recipe she was making instead of using the second for a glaze, and decided to keep using this method). Just a few ingredients – butter, powdered (icing) sugar, vanilla, egg yolks and flour – make these easy to whip up on a whim, too! They come together in very little time – the longest part is waiting for the dough to firm up in the fridge. Dorie offers four different variations on this cookie – I went with the classic version.
Often with Dorie’s slice and bake cookies, I have a hard time slicing them when they come out of the freezer but not this time. Maybe it’s the yolks that make the dough more forgiving after 2 hours in the freezer or maybe it’s that I used plant-based butter because I am taking them to school and have colleagues who can’t eat real butter – in any case, these sliced like a dream.
I added clementine zest to mine as that’s a flavour I love and then for some of them, I drizzled them with chocolate…
These are the ultimate easy shortbread cookie with the best melt-in-your-mouth texture. Another Dorie winner!
