Tuesdays with Dorie: Strawberry-Rhubarb Squares from Baking with Dorie

This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Strawberry-Rhubarb Squares was the perfect late Sunday afternoon bake this week as Ontario strawberries and rhubarb have just made their way into our stores.

This is a simple cake (with a touch of honey and buttermilk so it’s not too sweet) made special with a pile of thinly slice rhubarb and strawberries on top. It looks like a lot of fruit on the top and you wonder whether you should push it into the cake batter before it bakes. I didn’t and it all worked out ok!

It’s made in a 9-inch square baking tin which makes for a not-t00-tall bake that Dorie cuts into 16 squares. I made 9 larger squares out of this as I found it hard to cut through the fruit without completely mangling it!

It’s just SO pretty!

And because though we loved it, we don’t need a whole cake to ourselves, four of these squares went down the street immediately to our neighbours who commented on my Instagram Story of the finished cake. I had actually just cut these slices for them, knowing they’d love it so it was perfect!

(yes I’m wearing Crocs as my slippers, don’t judge LOL!)

This is a great recipe to remember when both these fruits are in season though Dorie gives some other options and honestly this wold be great with apples, pears or even blueberries (with some lemon zest in the batter). It’s not too sweet, just sweet enough (though we served with with a scoop of strawberry ice cream and our neighbours had whipped cream with theirs!).

  1. Oh, yours look so much prettier with that little sprinkle of confectioners’ sugar on the top…making a note in my book. Yes, I was reading those other suggestions in the book on ways to change it all up for various seasons, and indeed, they sound worth checking out, don’t they? Beautiful job, Mardi, and I am sure your neighbors are ever so happy they are your neighbors!

  2. This was just perfect wasnt it?! I had the same thought with all the fruit on top haha! Yours turned out beautifully…especially with the sugar sprinkled on top! I am sure your neighbors love living by you with all the baking you do. 😍
