This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s latest cookbook, Everyday Dorie and it’s a simple treatment for turnips and a great way to use them up if you bought them for a holiday meal and they are still languishing in the bottom of the crisper 😉
It’s a super simple recipe – basically you cook the turnip cubes in a little butter/ water/ sugar until they are golden, then swirl in some honey. It gives them a lovely sweetness and I feel like this method would work well with lots of other vegetables (parsnips maybe? or carrots as Dorie recommends). Note that the 8 minute cooking time listed in the recipe was more like 20- 25 to get the caramelization I like. I sprinkled a little fresh thyme on just before I served (love honey and thyme!) for some colour.
This was simple but a nice way to jazz up an underrepresented vegetable! A repeat for sure!
