No matter where I am, I always have a notebook at hand, and I’m pretty good about scribbling down ideas as they come to me. What I’m not good at is going back to the books and doing anything with the ideas. When I pick up an old notebook, it’s always a revelation. And so you can imagine how I felt when I found “pink peppercorns + strawberries” in one notebook and “pink peppercorns + white chocolate” in two others. Clearly, this was a persistent idea, but not one I had ever followed through on . . . until now.
I knew the combo would be good, I just couldn’t figure out how I was going to put it together. And then I thought about thumbprints and all was revealed. The pink peppercorns — which are really not peppercorns at all; but the dried berries of a shrub related to the cashew tree — are ground with the cookies’ sugar in a food processor and then the white chocolate is added with the flour and pulverized. The strawberry comes in as the jam that fills the thumbprints.
Ok… seems like an odd combination to me but Dorie rarely steers you wrong. I had pink peppercorns already (not sure I would have bought them just for this recipe though…) and found that when I ground them with the sugar the outside part (the husk?) wouldn’t grind properly (left large pieces) so I had to sift through and remove that part which was a bit fiddly. I had flecks of pink in the cookies but honestly, I didn’t notice the flavour that much so not sure I would bother with that again.
The cookies themselves were tasty – loved the addition of the white chocolate to the dough (so decadent!). I didn’t use strawberry jam, I had raspberry open so used that. Waste not, want not!
