I made this week’s recipe for Tuesdays with Dorie on the fly last weekend. Between preparing for the new school year, testing and writing up 20-some recipes to be photographed for my book this week and other general busy-ness, this one somehow slipped though the cracks (being a big list-maker I am not sure how this has happened but there you go – sometimes life gets in the way…). But on Sunday afternoon, about the time I realised that I was running out of daylight hours, I opened my fridge to find the following:
Quick blueberry (well, and strawberry) jam
Sweet tart crust
Creamy Philadelphia cream cheese mixture
So, yeah, all ingredients needed for this recipe – a sweet tart crust filled with a soft cheesecake-like mixture and topped with a blueberry jam (mixed with a few corn kernels). Hey, I even had corn kernels.
A few minutes later and I basically had this week’s recipe assembled, sans corn kernels because, well… Still not sure about that.
I WILL make this and actually use Dorie’s recipes at some point. In the meantime, how cool that I had all these ingredients (for very different dishes, I’ll add) in my fridge. For my cookbook! Never thought of putting them together but it’s a brilliant concept – no-bake cheesecake is always a good idea. dangerous if you have the ingredients on hand though đ
