Tuesdays with Dorie (Baking Chez Moi): Apple pielettes

Apple pielettes from Baking Chez Moi on eatlivetravelwrite.comThis week’s Tuesdays with Dorie recipe had me thinking over and over “Why didn’t I think of that myself?” Basically it’s apple pie, minified. You know, that thing I do all the time with Dorie (and other) desserts because a 2-person household can only eat so many desserts, right?

These “pielettes” apart from having the cutest name ever, are the most adorable looking little things and I found them *just enough* for dessert. Minifying things or making them individual-sized makes it easy to practice portion control. I mean, you might go for that extra sliver of an apple pie but you wouldn’t just go and take another pielette, would you? You would? Oh, ok then…

Apple pielettes for Tuesdays with Dorie on eatlivetravelwrite.comThe recipe ie pretty easy – Dorie’s “Good For Almost Everything Pie Dough” filled with apples and other goodies (apple sauce, apple jelly, dried fruits…) – I used some apple butter instead of the sauce and jelly that I had made a couple of weeks previously and it was perfect. Now that I have my new rolling pin that helps me roll the dough out to an even thickness (buy one for yourself on Amazon US or Amazon Canada), the dough was simple to work with and came out perfectly.

I may not have chilled my dough cups enough before I filled them as they shrunk slightly in the oven (you can see in the pictures the tops aren’t quite big enough…) but that’s a lesson for next time. I will absolutely be making these again as, even though they are a bit more fiddly than one large pie, there’s nothing more adorable than a platter full of these. And, hey, t’is the season!

  1. Yours look great as usual. I agree that they are the perfect dessert size. One is just barely enough… enough to have a 2nd. If I had a slice of pie that would be it.

  2. These were delightful. And as the days get chilly, had me thinking of mincemeat pies…

    A good point re portion control, as I am SURE I would eat more given a honking big pie to look at and carve up. 🙂

  5. These were wonderful and I am also surprised you hadn’t thought of this yourself – minification is your specialty! Yours turned out perfectly. I think a looser seal just means more caramelized filling.
