Tuesdays with Dorie: Chocolate-Tipped Cream-Puff Pocky Sticks from Baking with Dorie

This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Chocolate-Tipped Cream-Puff Pocky Sticks sounds much more difficult to make than it really is – such an easy recipe for great ROI – “impress your friends with less work than they think you’ve put in” are my favourite types of recipes!

Dorie says:

Inspired by the Japanese chocolate-capped biscuits called Pocky sticks, these crisp cookies are piped as long as grissini and as slender as swizzle sticks. Baked until they’re break-with-a-snap crisp, glazed with chocolate and finished with a sprinkling of sugar, they’re nifty served alongside ice cream, as an after-dessert nibble or a snack. I think these are most stylish—and the most fun—when they’re piped a foot long, but they’re also attractive at half the length.

Also – ssshhhh – I’m cheating a little and posting images from when we made them for a Dorista Bake-a-Long online back in April of 2022. I’m up to my ears in end-of-year school stuff (including making éclairs and crème pâtissière with 20 kids today!) so I figured I’m allowed to take a bit of a cheat on this post. I mean, I made them and all!

If you’re ok making choux pastry, then these will be a cinch – the only tricky part is piping them thin enough. I didn’t use a piping tip, just cut the end off the piping bag. I kind of like the uneven look of them piped freehand!

For this Dorista Bake-a-Long, we were just 3 – me, Cher and Eileen and we had a blast! The three of us initially met when we were working our way through Around my French Table and we had kept in touch via Dorie recipes since 2010!

I love how different all our Pocky sticks turned out!

There’s not much to say about this recipe except that it’s fun and easy to make!

Also: I REALLY would love another Dorista Bake-a-Long. We did a few of these during the pandemic (one of the great things to come out of an otherwise awful time) and it was so much fun getting to “meet” people  like that! Doristas – what say you?
