Tuesdays with Dorie: Devil’s Food Party Cake from Baking with Dorie

This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Devil’s Food Party Cake was a recipe I voted for because I knew I had a birthday cake to make earlier this month! If you’ve been following along here for a while, you’ll know that I don’t often make full-sized baked goods and I’m the queen of minification

This month, however, I DID make the whole (intimidating for me!) layer cake, serving 10 people! Go me!

To be fair, there’s nothing terribly difficult about making a full-sized cake but I always get in a mess icing and decorating big cakes and find them a bit of a faff, to be honest. But I had the time this month to take my time and it wasn’t too hard at all!

I made the cake gluten-free, using Bob’s Red Mill 1-to-1 Baking Flour (<<< affiliate link) and while it made the cake slightly denser than it was meant to be, everyone loved the “fudgy” quality!

*Because* the cake wasn’t as “crumby”, it was actually easier to ice so I’ll take that as a win! Normally when I try to frost cakes, I’ve got crumbs all in the icing (and I know you can do a “crumb coat” but that is part of the fuss I don’t appreciate LOL!), but here there was none of that. Perhaps because I was taking my time… Topped with the BEST 100s and 1000s (rainbow sprinkles!) from Sweetapolita (<<< affiliate link but they are truly the best!), of course!

The cake sliced BEAUTIFULLY – I let it sit in the fridge until about 30 minutes before serving and it was the perfect slicing and eating consistency. I was SO pleased with this one (as was Mr Neil whose birthday cake it was!).

  1. Happy Birthday Mr. Neil! I am not much of a cake decorator either but looks like you did a bang up job. I am glad that everyone liked your gluten free version.
