Tuesdays with Dorie: Spinach-Mozzarella Pie with Parm Crumble from Baking with Dorie

This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Spinach-Mozzarella Pie with Parm Crumble is a recipe with a few different components that requires a bit of forward planning. The crust needs to be partially baked, the filling needs to be cooled, the Parmesan crumble topping needs to be chilled, but if you plan your time, none of the components is particularly complicated and it comes together as the fanciest quiche-like dish you ever did see!

On the surface, it’s deceiving…

Looks like a sweet, crumble-topped pie, right (kind of like this or this).

But wait… do I see some … SPINACH peeking through?

I was a little worried about this dish to be honest, baking through a rough weekend and my heart was not in it. Sometimes when we bake and we’re not in the right mindset, it comes through in the baked goods and they don’t turn out as well as they should. This turned out better than I expected – because I made each component separately (the pastry and spinach filling the day before, the crumble the morning of). And voilà, it actually held together beautifully:

This is what I would call a hearty, but fancy, quiche. The filling includes spinach, onion, garlic, and shallots sautéed then mixed into a cream/ milk/egg custard mixture that also includes parmesan and mozzarella cheese. That would be fine enough on its own but add in the buttery parmesan “crumble” on top and you have a beautiful iteration of a quiche that is definitely “guestable” (i.e. you can serve it to guests). A winner!

  1. Wow, beautiful photos…I really like how you have the crumble over the whole top…I just sort of sprinkled it on here and there so next time I will do like you did. And there will be a next time as this was all delicious. A few steps, like you said, but not difficult and it’s mostly how I cook/bake…a little here and there and then it magically comes together.
