Cook the Book Fridays: Seafood Pasta from Everyday Dorie

This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie. Seafood Pasta wasn’t something I was overly excited about making because you know, #seafood, but I was planning to make a small portion of it for Neil anyway. It’s basically squid, prawns and white fish in a tomato-ey sauce with pasta. Sounded… a bit odd, like you had a bunch of seafood needing to be used up and popped it all in a pasta sauce (this might have been what happened with this recipe development!).

I planned on making this with just fish and prawns, no squid (and then I would have eaten it), but lo and behold, when we got to the fish counter where we usually get our fresh fish, the fishmonger wouldn’t cut any of the pieces of fish small enough for 2 portions of this. Ok then. Ans on a busy December weekend, we weren’t about to schlep to other places …  So it was just going to be prawns in tomato sauce and pasta (which worked for me!).

Because we didn’t have the squid to tenderise, we didn’t have to cook the tomato sauce low and slow but the sauce was super flavourful anyway with loads of herbs, wine, lemon, and some butter to finish. It reminded me how tasty a simple tomato pasta sauce can be with a few easy add-ins. throw in some prawns (and I would add some feta next time too) and you’ve got a lovely fancy meal with very little fuss. Just the kind of meal we all need at this time of year!
