Cook the Book Fridays: Mixed Berry Pie from Everyday Dorie

This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie. Mixed Berry Pie was the perfect multi-day recipe for this not-quite-back-to-normal-recovering-from-major-surgery baker. I made the pie pastry one day and assembled it the next – and it was a great way to take advantage of VERY local berries:

  1. Backyard blackberries
  2. Locally sourced mulberries
  3. Jostaberries from a friend’s allotment garden
  4. Local frozen wild blueberries

I mean, if that doesn’t scream SUMMER to you, I don’t know what does!

I very rarely make a double-crusted pie (too much fuss when you can just make a galette) so I was worried that this would be too much of a challenge but I took it slowly (helps to work with cold but pliable pastry) and it seemed to be ok!

A little rough around the edges but it baked up beautifully and it didn’t leak!
