
This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie.
Twice-Flavored Scallops + Garnish (Lemon “Goop” and Syrup) is perhaps not the recipe I might choose to make on a weekday but it’s simple enough for a “fancy” weekend dinner and it’s certainly “guestable” as a friend of ours likes to call it (good enough for guests).
Basically it’s seared scallops (we are lucky to have an amazing fishmonger in our neighbourhood) with a sweet/ salty lemon “jam” which is the most complicated part of the recipe. The scallops marinate for a while in a mixture of soy sauce, ginger, yuzu and honey -the marinade is also used to serve the scallops and the “goop” is slicked on the scallops at the last minute – they really are very flavourful and, as long as you have all the ingredients on hand and you’ve made the lemon “goop”, it’s a relatively easy dish to pull together (so, sure, I guess a weeknight dinner if all those things are in place).
We served this with steamed rice and some sort of greens and it was a lovely light dish but not light on flavour.
