
This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie. Eggplant and Ginger Tartines wasn’t something I would necessarily have made from scratch on my own (i.e. outside this group) and I’ll admit to taking a few shortcuts here.
Sidenote: this is not the snack to eat before you go for a run 😉
Dorie’s recipe calls for you to make a Baba Ganoush-type spread, then you toast some bread, drizzle the top of each slice with olive oil and season with salt and pepper. Then you place pear slices on the bread and sprinkle with lemon juice, followed by spreading a layer of the eggplant over the pear, then finish with scallions, radishes, greens, mint and pomegranate seeds,(optional). I used store-bought baba ganoush, and jazzed it up with a little extra Sumac and ginger and used pumpkin seeds instead of pomegranate arils (for some crunch – it needed it).
This was… “interesting”. Ok, not to my taste at all. Too much going on, too many competing flavours and felt like using up the contents of the fridge before you go away on a holiday!

To my untrained eye, it looks like a lot of “stuff” on a piece of toast. But, seems like a good snack on a cold day.
“Using up leftover ingredients in the fridge” 😂😂👍👍. We gave this a chance…made the recipe as called for and just not a favorite of ours. Never had baba ganoush so I guess we had nothing to compare it too. Just not a fan.
When I get a lot of eggplants from the farm in the summer, baba ganoush is what I like to make as dips. Like the short cuts you take to make the tartines your very own.

I totally agree about the weird combo pantry clear-out. I didn’t mind these, although I definitely tweaked more to my tastes. Will keep in mind your tip about not eating before running. hahaha
