Tuesdays with Dorie: Goat Cheese Bites from Baking with Dorie

This week’s Tuesdays with Dorie recipe is Blue Cheese Bites from Dorie Greenspan’s Baking with Dorie.

Basically, a savoury mini-muffin made with olive oil instead of butter and blue cheese with some dried fruit, the batter for these comes together very quickly and then hangs out for a couple of hours in the fridge before they bake for around 11 minutes. A perfect snack to prepare early in the day and serve for l’heure de l’apéro later!

I used some (very) mild goat cheese that I had in my fridge instead of purchasing blue cheese specially for this recipe (always looking to use up cheese bits and pieces!) and was pleased to clear that out but on reflection, could have definitely used some stronger-tasting cheese (or a touch more salt). These were tasty but needed a little “something” else that I believe the blue cheese would have brought.

A lovely snack to accompany some rosé and white wine on a sunny October afternoon playing pétanque with friends though 🙂
